Salasar 'Carte Azur' Crémant de Limoux Brut
Maison Salasar is a historic producer in Limoux, the Languedoc town considered one of the cradles of sparkling wine in France. Their 'Carte Azur' Brut is a traditional-method Crémant de Limoux, drier than Prosecco and a touch fruitier than Champagne. Awarded Gold at the Sommelier Wine Awards.
Grape varieties: Chardonnay, Chenin Blanc and Pinot Noir.
Terroir: Hillside vineyards around Limoux in the Aude valley, with a cool, breezy climate influenced by both the Mediterranean and the Atlantic.
Vinification & ageing: Traditional method with secondary fermentation in bottle. Aged a minimum of 15 months on lees to develop complexity and a creamy mousse.
COLOUR: Bright golden yellow with green reflections.
NOSE: Ripe pear, blossom honey, hawthorn, buttercream and a hint of pineapple.
PALATE: Fresh and finely structured, with creamy bubbles and a clean, refreshing finish.
FOOD PAIRING: An elegant aperitif, also lovely with shellfish, lightly creamy pasta, sushi and soft cheeses. Serve at 6-8°C.
