2024 Stray Dog Winery Räuschling
Stray Dog Winery is a boutique Zurich-based project producing tiny quantities of vin de garage-style wines from rare Swiss grapes. Räuschling is one of Switzerland's most distinctive native white varieties, with only around 26 hectares planted nationwide - predominantly on the slopes of Lake Zurich, where slate and moraine soils give the grape its signature racy acidity.
Grape variety: 100% Räuschling - a rare, indigenous Swiss variety.
Terroir: The slopes around Lake Zurich, particularly Meilen, with slate, moraine and gravel soils. Cool, alpine-influenced climate.
Vinification: Cool fermentation in stainless steel with selected yeasts; short lees ageing to preserve the grape's pure, taut profile.
COLOUR: Pale straw with green glints.
NOSE: Delicate and precise, with green apple, lemon zest, white flowers and crushed stone.
PALATE: Dry, taut and refreshingly acidic, with a long, saline mineral finish.
FOOD PAIRING: A natural with lake fish, oysters, fresh goat cheese and Swiss-style cheese fondues. Serve at 8-10°C.
We deliver in Sofia and across Bulgaria. Pickup available at the bar at 33 Sveti Kliment Ohridski Street during opening hours.
