2024 Bononia Estate Dimyat
Bononia Estate sits on the largest bend of the Danube in north-western Bulgaria, on land restored by the Yotov family who founded the estate in 2013. Today Bononia farms 160 hectares with modern viticulture and was ranked among the World's Best Vineyards Top 100 in 2024. This Dimyat captures the natural freshness of Bulgaria's most emblematic white grape.
Grape variety: 100% Dimyat (also spelled Dimiat), an indigenous Bulgarian white variety.
Terroir: The Danube Plain wine region, with calcareous and alluvial soils that give Dimyat its hallmark freshness and aromatic lift.
Vinification: Cool fermentation in stainless steel, with a short period on fine lees to preserve the grape's delicate floral and stone-fruit profile.
COLOUR: Pale straw-yellow.
NOSE: Subtly fruity, with white peach, acacia blossom and a hint of citrus.
PALATE: Fresh and balanced, with crisp acidity and a clean, gently mineral finish.
FOOD PAIRING: Lovely as an aperitif, or with grilled fish, seafood, salads and fresh white cheeses. Serve at 8-10°C.
