2023 Clos Bibliothèque Dimyat
Clos Bibliothèque is a boutique Black Sea winery in the village of Nevsha, some 50 km from Varna. Working with French consultants and a fine-wine ambition rare in Bulgaria, the estate matures its wines in Burgundy oak from Tonnellerie Chassin and in Clayver ceramic amphorae from Genoa - including a 250-litre amphora dedicated specifically to Dimyat.
Grape variety: 100% Dimyat (Dimiat), Bulgaria's emblematic native white grape.
Terroir: The Black Sea region near Varna, with mild maritime influences and limestone-rich soils that lend salinity and freshness.
Vinification & ageing: Vinified and matured partly in Clayver ceramic amphora and partly in Burgundy oak, with extended lees contact to add texture and depth while preserving the grape's pure aromatic profile.
COLOUR: Bright pale gold.
NOSE: Refined bouquet of white peach, citrus zest, acacia and a subtle saline minerality.
PALATE: Textured and precise, with vibrant acidity, fine fruit and a long, dry finish.
FOOD PAIRING: Pairs beautifully with grilled sea bass, oysters, sushi and fresh white cheeses. Serve at 10-12°C.
