The 2017 Domaine Maldant Pauvelot Collection Beaune 1er Cru Les Aigrots is a wine of finesse with a beautifully structured length.
The bouquet, marked by fruit notes, is expressive, complex and floral, with delicate peony aromas.
AGEING
Traditional vinification in temperature-controlled stainless steel tanks. Cold maceration under carbon dioxide to protect aromas and colour. Aged for 16 months in oak barrels.
TASTING
On the palate, this Burgundy is clear and delicate, with solid structure.
Impressive spice notes unfold within a silky tannin structure leading to a long finish.
FOOD PAIRING
Serve at 13-18°C with game dishes, beef fillet, or duck stuffed with foie gras.
