2024 Stray Dog Winery Chasselas
From Stray Dog Winery, a Zurich-based boutique producing rare Swiss varieties in tiny vin de garage batches, this Chasselas hails from Lavaux - the UNESCO-listed terraced vineyards of canton Vaud overlooking Lake Geneva. Chasselas is the king of Lavaux: a transparent, terroir-driven white that thrives on the region's stony, sun-drenched slopes.
Grape variety: 100% Chasselas.
Terroir: The terraced UNESCO World Heritage vineyards of Lavaux, on the steep, stony slopes above Lake Geneva. The lake reflects sunlight onto the vines, while stone walls store and release heat.
Vinification: Cool fermentation in stainless steel, with optional partial malolactic fermentation to round out the texture.
COLOUR: Pale gold.
NOSE: Subtle, with orchard fruit, white flowers, lemon pith and a distinctive flinty mineral lift.
PALATE: Gentle and rounded, with low acidity, fine texture and a saline, stony finish.
FOOD PAIRING: A classic match for cheese fondue and raclette; also excellent with lake perch, charcuterie and mild soft cheeses. Serve at 9-11°C.
